FIELD: food industry.
SUBSTANCE: the suggested method deals with blanching raw material, its reducing, preparing the stuffing, treating upon colloid mill followed by thermotreatment. At the stage of stuffing preparation one should additionally supplement raw material with honey extract of walnuts of milk-wax maturity and glycine at the quantity of 0.2-0.3 kg and 0.03-0.04 kg per 100 kg raw material, correspondingly. The method enables to prolong terms of storage of obtained product and, also, increase biological value of the product due to enriching it with vitamins, glycosides, flavonoids, amino acids, carbohydrates and mineral elements.
EFFECT: higher efficiency of manufacturing.
