FIELD: dairy products industry. SUBSTANCE: according to proposed process hexane is added to sample of milk, they are mixed and prepared mixture is settled, extracted hexane with recovered phospholipids is drained. Second extraction is conducted by addition of hexane to won precipitate. Then extracted hexane is mixed, settled and drained and is mixed with extracted hexane of first extraction. Mixture is filtered, hexane is distilled out of filtrate and third extraction is carried out. Acetone is added to won precipitate, they are mixed and matured at temperature of 50 C in the course of 4.5-5.5 min and solution of acetone above mixture is removed. Acetone is added to remaining precipitate, they are mixed and settled and solution above mixture is removed. Acetone is added again to obtained precipitate, they are mixed and acetone is removed out of obtained mixture and remaining precipitate of phospholipids is washed with acetone taken in the amount o 9.50-10.5 cu cm, is dried and cooled and mass of phospholipids is found.
