FIELD: analytical methods in milk industry. SUBSTANCE: method provides for performing acid hydrolysis of sample, separation of proteins via filtration, taking aliquots from solution, supplementing three of them with reference vitamin B2 solution, measuring fluorescence intensity, and determining vitamin B2 amount on the basis of dependence of fluorescence intensity on vitamin B2 amount introduced into aliquot.
