FIELD: food industry. SUBSTANCE: invention relates to methods of preparing food acid to confer refreshing taste to foodstuffs, alcoholic and nonalcoholic drinks. Method of preparing food acid involves stages of combination of fumaric acid with an organic acid substance in an aqueous medium to obtain a mixture followed by drying a mixture presenting fumaric acid-containing particles and an organic acid substance. The content of fumaric acid and amount of an organic acid substance are taken so to provide fumaric acid content 5-95% as measured for particles. Malic, tartaric, citric, lactic, ascorbic acid and a mixture of any two or some indicated acids are used. The obtained product is nonhygroscopic, it shows free fluidity, suitable in handling and package and shows a taste of natural fruits.
