FIELD: food-processing industry. SUBSTANCE: apparatus has housing with charging throat and drum-type cutting tool. Cutting members are arranged circumferentially of drum surface. Apparatus has separate cutting member arranged opposite said cutting members for displacement in horizontal plane. Slide valve is positioned in housing under cutting tool for directing ground mass into centrifuge and shelf-type dryer or onto conveyor for packing. Steam supplying branch pipe is connected to housing above separate cutting member and cold water supplying branch pipe is positioned below said separate member. Apparatus may be used in meat industry for grinding bones and simultaneously for melting out fat and obtaining bouillon, powdered soup, fat and bone flour.
