FIELD: meat industry. SUBSTANCE: apparatus has immovable cylindrical casing divided by partitions into coarse milling chamber and fine milling chamber. Said chambers have section reducing from the top to the bottom. Pack of cutting members is mounted for rotation on shaft. Side surfaces of fine milling chambers are equipped with replaceable perforated members. Open steam or hot water is supplied into apparatus together with meat-and-bone raw material. Ground meat-and-bone material is pressed through perforations into fine milling chambers. Finely milled mass is pressed through perforations into discharge device.
