FIELD: technology of caviar production, particularly, preparation of granular caviar. SUBSTANCE: before screening, roe membranes are treated on a net by sprayed jets of 1-3-% common salt solution with temperature of 70-75 C for 5-10 s. Screening and salting of roe membranes are simultaneously carried out by their mixing in a vessel in 5-10-% solution of common salt with temperature of 46-52 C for 2-5 min at ratio of solution and roe membranes masses equal at least to 3:1.
