FIELD: fish industry, particularly, preparation of products of hydrobionts processing for dietetic alimentation. SUBSTANCE: dietetic product contains minced fish, starch, dry milk, egg, components of mollusks processing, and also granulated sugar, ascorbic acid, sodium phosphate, sodium nitrite and vegetable oil. Used as components of mollusks processing are squid gonads and mussel hydrolysate. Method of producing dietetic product includes selection of components, their chopping and mixing. Fish raw material is chopped for preparation of farce with various degree of chopping from 1 mm to 1 cm. Mixing of components is conducted in cutter for 5-8 min. In this case, components are introduced in the following sequence: fine-minced fish farce, sodium nitrite, ascorbic acid, mussel hydrolysate, squid gonads, sodium phosphate, granulated sugar, dry milk, fresh hard-boiled egg, starch, coarse-minced fish farce, and vegetable oil. Prepared mass is molded in sausage casing and subjected to heat treatment up to 70-75 C in center of loaf, and cooled.
