FIELD: pharmaceutical, cosmetic and food industry; applicable for production of extracts from dog rose fruits. SUBSTANCE: method involves primary processing of raw material, grinding, mixing with water, infusion, extraction and expressing. After infusion, additionally conducted is pressure releasing in vessel, and infusion process is carried out in air-tight vessel at temperature of 105-190 C and pressure 0.12 MPa and 1.25 MPa. Parameters ratio of infusion process must satisfy principle of pressures counterbalancing: intracellular pressure in raw material and pressure in vessel on condition: 180 <T x P x t <182, where T is temperature of water heating with ground raw material, C; P is pressure in vessel, MPa; t is time of infusion, min. EFFECT: optimum effective conditions for preparation of extracts from dog rose fruits with maximum output of active substances, particularly, vitamin C. 4 cl, 1 tbl
