SUBSTANCE: invention relates to the food industry, and in particular to methods for producing semi-finished products from rose hips. The method of obtaining a semi-finished product from rose hips, including hypanthium and the stone part of the fruit, is characterized by the fact that it provides for the acceptance and sorting of fresh raw materials, or the acceptance of frozen raw materials, which are pre-thawed at a temperature of 20 ± 2 °C for 12 hours and, if necessary, sorted, or acceptance of dried raw materials, which are pre-hydrated for 12 hours at a temperature not higher than plus 20 ± 2 °C. Next, a mixture of rose hips is compiled from prepared fresh or frozen or dried raw materials with the addition of water, while the dry matter content in the finished product should be at least 55%. Then it is loaded into the apparatus, in which grinding and deodorization is carried out at a temperature of 50-65 °C, followed by homogenization of the mass at an exposure intensity of 100-500 W/kg per product for 15-30 minutes. Then the product is packaged and labeled. Then product is cooled at an ambient temperature not higher than plus 20 ± 2 °C and stored in a place protected from direct sunlight for 2 years.

EFFECT: invention makes it possible to obtain a product in which the native properties of the raw material are preserved with a high resistance to delamination of the structure without the use of stabilizing and preserving substances with a long shelf life.
