FIELD: starch industry. SUBSTANCE: method involves simultaneously grinding, separating paste and dehydrating pulp in inertial filtering centrifuge equipped with rotor having tapering angle equal to or exceeding pulp friction coefficient and with potato grinding device placed inside rotor. Potato grinding device has disk fixed in bottom and adapted for carrying grinding members and perforated ring arranged around and in spaced relation to disk. Potato grinding device is further provided with shell attached to centrifuge casing cover and adapted for defining potato receiving chamber. Lower part of said chamber is perforated and located in space between disk and ring and adapted for additional grinding of potato particles. Starch suspension is discharged from centrifuge, saturated on hydraulic cyclone, refined and spilled. Starch is dehydrated and dried.
