FIELD: personal use articles.
SUBSTANCE: method for determining the quality of potatoes involves washing 3-5 potatoes, potato rubbing up on the grater to paste. Then the paste is put in a glass, mixed with a stirrer speed 4-5 s-1 for 60-70 minutes, diluted with water and separated into two fractions. One fraction contains pulp, and another - a suspension of starch. Then the resulting suspension of starch is left for 5-15 min and the liquid is poured. Starch is dewatered, dried, crushed and sifted through a sieve. Then the reflection coefficient is measured at the photometer with a blue colour filter. The arithmetic mean of ten measurements of the reflection coefficient is calculated and the quality of potatoes is determined. Varieties of potato, which starch with adsorbed juice has a reflection coefficient of 75%, are suitable for processing into starch. Potato varieties which starch with adsorbed juice has a reflection coefficient less than 75% are not desirable for processing into starch.
EFFECT: invention improves the measurement accuracy of the reflection coefficient of dying agents of potatoes and determines the suitability of potatoes for processing into starch.
