FIELD: food industry, particularly, production of mixture of β-sitosterol fats. SUBSTANCE: method involves dissolving 0.5-80 mas.% of initial material containing β-sitosterol or β-sitosterol and β-sitostanol in 5-90 mas. % of oil and/or fat at temperature 80-140 C up to full solution. Then mixture is cooled to 40-80 C, and during the cooling 5-30 mas.% of water is added at temperature equal to temperature of mixture. Then mixture is mixed till preparation of homogeneous and stable product. In this case, β-sitosterol or β-sitosterol and β-sitostanol is partially dissolved, and/or is in microcrystalline form in mixture. Composition of fats contains, mas.%: initial material containing β-sitosterol or β-sitosterol and β-sitostanol, 0.5-80; oil and/or fat, 5-90; water, 5-30. Composition of fats is used as a remedy for reduction of level of total content of cholesterol, and it is added in food products.
