FIELD: food industry. SUBSTANCE: linseed oil, containing unsaturated fatty acids including linoleic acid, alpha-linolenic acid, oleic acid, saturated fatty acids, and squalene in specified proportions, is prepared by a method involving mechanical treatment of linen seeds and extraction with solvent (liquid gas at temperature up to 5 C) followed by separation of oil from extract. During mechanical treatment, seed shells are destroyed without damage to seed cores. Invention may be used in pharmaceutical industry.
