FIELD: food-processing industry, in particular, brewing industry. SUBSTANCE: method involves removing funnel-shaped and stagnation zones in wort cooking apparatus in the process of mixing by equalizing peripheral mixing speed in different points of apparatus. Peripheral speeds are equalized by increasing angular speed in layers arranged closer to axis of rotation of mixed mass. Wort cooking apparatus has casing and mixer equipped with shaft. Mixer has openings with diameters increasing from axis of rotation to periphery in accordance with following dependence: =const, where ϑ is peripheral speed, P is mixer opening area. EFFECT: increased efficiency and improved quality of product prepared on the basis of obtained brewing mash. 4 dwg
