FIELD: food industry. SUBSTANCE: method of producing chewing gum with controlled release of antibacterial agent, and also chewing gum is realized at physical correction on liberation of said antibacterial agent at application of coating on it and at drying. Application of coating is carried out by encapsulation on said antibacterial agent, while partial application of coating is carried out by agglomeration by means of gripping at absorption or at technological treatment in repeated stages of encapsulation, agglomeration and absorption. Then said antibacterial agent with coating is subjected to complex drying, and its particles are sorted by size with the aim to prepare antibacterial agent with corrected release for using in chewing gum. At including in composition of said chewing gum in powdering mixture or in coating on tableted chewing gum, said particles, in the process of chewing, provide quick or low release of antibacterial agent.
