FIELD: food-processing industry. SUBSTANCE: syrup for coating of chewing gum pellets is prepared with the use of emulsifier emulsion and one of oil-based aromatizing agent and edible grade acid. Aromatizer emulsion facilitates retention of volatile fruit aromatizers, which may otherwise volatilize during coating process. Usage of edible grade acid allows coating syrup to be thinner for uniform coating of chewing gum. Uniform distribution of edible grade acid emulsion over the entire coating reduces astringency self-heating deposits. Resultant hard crust does not crack and provides high-quality coated product with intensive aroma and good acidity.
