FIELD: food- processing industry. SUBSTANCE: method involves obtaining protein material suspension; treating said suspension with acid phosphatase enzyme used in an amount of 0.1% to 10% by weight of soya protein material with fermentation activity of from 400 to 1,400 units per 1 kg of soya protein material at temperature of 20-70 C, pH of 3-6 during time period of from 30 min to 4 hours; washing treated suspension. Soya protein material is soya protein concentrate or isolate. Phytase enzyme may be used apart from acid phosphatase.
