FIELD: dairy industry. SUBSTANCE: milk substitute has following components, wt. %: carragenate, 0.01- 0.03; calcium-scavenging agent selected from phosphates or citrates such as mono-, di- or trisodium phosphates or mono-, di- or trisodium citrates, or their mixtures, 0.1-0.3; dry skimmed milk, 10-12; dry milk whey, 5-9; lecithin and fat, 7-10. Dry milk whey is dissolved in an aqueous medium containing carragenate and calcium-scavenging agent at 30 to 65 C to give water phase- containing medium wherein dry skimmed milk is then dissolved at 30 to 65 C, said water phase-containing medium being aged before or after dissolution of dry skimmed milk over a period of time from 10 min to 4 h for wetting dry substances of milk whey. According to invention, carragenate and calcium- scavenging agent are dissolved portionwise: in particular, carragenate is dissolved in cold water and agent is dissolved separately and then added to other ingredients.
