FIELD: sugar industry. SUBSTANCE: invention relates to production of sugar from white beet and raw and involves preparation of sugar-containing solution, lime-carbonate refinement thereof, filtration, filtration and thickening of refined solution into syrup. After that, strikes are boiled out in vacuum apparatuses using addition of crystals and their growth. During this operation, vacuum apparatus receives foaming preventing reagent, namely ozone-air mixture with 3-5 mg/l ozone, in amounts 0.5 to 2.5 cu.m per 1 t evaporated water, crystals being introduced during 3-5 min and, at the end of boiling and in the same amounts, during 3-10 min.
