FIELD: food industry.
SUBSTANCE: disclosed is a method of producing fillmass of first crystallisation, which comprises thickening a mixture of syrup with melting of sugars of second and third crystallisations, crystallisation centres start-up, their fixation and build-up, fillmass condensation, discharge into a receiving fillmass mixer, maintenance in it, separation and washing of sugar crystals in a centrifuge to obtain crystalline white sugar, first and second effluents. Crystallization centres are represented by powdered sugar in amount of 5–7 pcs per 1 mm of the “test glass” surface length. Washing sugar crystals in a centrifuge is carried out in two stages — at the first stage, sugar crystals are washed with a second effluent of this fillmass with the addition of a saturated solution of a trisodium salt of nitrilotrimethylphosphonic acid as a chromaticity inhibitor, and at the second stage sugar crystals are treated with hot water preliminarily saturated with steam.
EFFECT: invention ensures efficient operation of the sugar plant.
