FIELD: food industry. SUBSTANCE: invention relates to dietetic lipids being especially for children nutrition. Invention proposes lipid composition where content and distribution of fatty acids is similar with content and distribution of breast milk fatty acids and it comprises, wt.-%: free fatty acids, less 2%; saturated fatty acid, 35-55; monounsaturated fatty acids, 30-45; polyunsaturated fatty acids, 9-22. The composition comprises palmitic, caprylic, capric, lauric and myristic acids as saturated fatty acids. The composition comprises arachidonic and docosahexaenoic acids as polyunsaturated fatty acids. Palmitic acid is mainly at 2-position of triacylglycerols and arachidonic and docosahexaenoic acids are distributed between 1-, 2- and 3-positions of triacylglycerols. Lipid composition is prepared by re-esterification of lipid mixture that results to random distribution of fatty acid residues between 1-, 2- and 3-positions of triacylglycerol. Then free fatty acids are removed from product. Children nutrition comprises proteins, carbohydrates, lipids, vitamins and trace elements being the nutrition comprises from 50 to 100 wt.-% of lipid components as lipids. Children nutrition can be prepared in liquid or powder-like form. Invention allows to prepare lipid composition where its components and structure are similar to component and structure of breast milk.
