SUBSTANCE: composition comprises chocolate glaze, sand sugar, syrup, alcohol, condensed milk, roasted crushed ground nut, "plum" aromatizer identical to natural aromatizer, and precooking marrow squash. Said components are used in the following ratio, wt%: chocolate glaze 25.6-27.6; syrup 7.3-7.5; whole condensed milk 10.4-10.7; roasted crushed ground nut 2.3-2.4; precooking marrow squash 3.0-3.1; alcohol 0.50-0.55; "plum" aromatizer 0.048-0.05; sand sugar the balance. Composition is used for producing fondant center candies. EFFECT: increased biological value and improved organoleptical properties of finished product.
