FIELD: meat industry. SUBSTANCE: invention relates to taste-aromatic food supplements used in production of boiled sausage articles. Food supplement comprises food phosphates, food sodium chloride, cheesy aromatic principle of firm "Dragoko", ascorbic acid, cheesy powder of firm "Keri". Also, it comprises lemon essential oil, nutmeg essential oil, clove oleoresin, cinnamon oleoresin, red pepper oleoresin, mace oleoresin, nutmeg oleoresin, black pepper oleoresin and food emulsifying agent taken in the definite ratio of components. In the process of preparing the supplement essential oils and oleoresins are prepared separately by their heating and dispersion for glucose part. Cheesy aromatic principle is prepared separately by its mixing with food emulsifying agent and then applied on remained glucose part. Then prepared components are combined and food sodium chloride, ascorbic acid, citric acid and food phosphates are added to them successively at stirring. Components are stirred and 2-3 min before stirring termination cheesy powder is added to mixture. Total temperature of ready supplement doesn't exceed 25 C in its addition to meat stuffing. The novel food supplement expands assortment of polyfunctional taste-aromatic food supplements for boiled sausage articles. Invention provides novel, modified and savoury taste and aroma, for example, cream taste or taste and aroma of different cheese sorts being without the presence of cheese as a component of stuffing that is rather expensive component or supplement.
