FIELD: oil and fat industry. SUBSTANCE: amaranth seeds are crushed on hammer crusher provided with forming channels. Resulting mixture is screened to produce starch fraction and mixture of amaranth germs with amaranth seed shells at temperature not higher than 40 C. Oil is settled and filtered. Oilcake after cold through-pass pressing is mixed with oil sediment and subjected to second pressing to give oil and cake in the form of germ flakes as protein fraction.
