FIELD: dairy industry. SUBSTANCE: invention relates to processing whey. Whey prepared from the basic manufacture is subjected for pasteurization at temperature 85 ± 5 C and exposition for 5 s, not less, is cooled and neutralized with 10% sodium hydrocarbonate solution to pH 6.0 ± 0.5. Fermentation is carried out with ferment of thermophilic streptococcus and acidophilic bacillus taken in the amount 1-5% of whey volume, respectively, or with ferment of thermophilic streptococcus or ferment of acidophilic bacillus. Process is carried out at constant values of temperature 40 ± 5 C and pH 6.0 ± 0.5 that are provided by addition of 10% sodium hydrocarbonate solution. Product is condensed to mass part of dry matter 40-45% at temperature 50-80 C. The prepared whey concentrate with reduced content of lactose shows the curative and prophylactic effect in diseases of digestive tract and the improved assimilation of product.
