FIELD: food industry. SUBSTANCE: the present innovation deals with reducing raw material and applying it between paired electrodes. Before reducing, raw material should be treated with preparation obtained due to successive extracting Mortierella humilis micromycete biomass with nonpolar extragent in supercritical state with water, alkali, water, acid, water, alkali and water followed by combining the first extract with solid residue at the quantity of 0,5-1•104 mg/t to be kept for 2-5 h. The suggested innovation enables to increase productivity and improve organoleptic properties due to excluding opalescence phenomenon. EFFECT: higher efficiency. 2 ex
