FIELD: food-processing, pharmacological and chemical industry. SUBSTANCE: method involves introducing sowing dose of bifidobacterium culture into nutrient medium including fat-free milk with milk base dry residue content of 8-10% and corn extract in an amount of at least 0.2%; sterilizing and cooling in carbon dioxide gas atmosphere to fermentation temperature; introducing sterile sodium bicarbonate solution into cooled nutrient medium until pH value of said medium is at least 7.0 and bifidobacterium culture until concentration reaches 3-5%; growing bacterial culture until pH value of said medium is 5.9-6.0; cooling resultant bifidus concentrate and introducing sterile yeast autolysate solution in an amount providing concentration of at least 1% of said autolysate. EFFECT: increased shelf life of bifidus concentrate and simplified composition of nutrient medium. 3 cl, 9 ex
