FIELD: medicine, food industry, veterinary science. SUBSTANCE: method involves addition of bacterium culture Bifidobacterium bifidum sowing dose to nutrient medium containing base nutrient medium with additions of cysteine hydrochloride, baker's yeast autolyzate, D-(-)-lactose, ascorbic acid and milk pancreatic hydrolyzate. Sterile milk at dry residue content 11-14% is used as nutrient medium base. Culturing is carried out to biological titer of bifidobacteria concentrate (0.8-1.0) x 1010 CFU/ml, not less, at acidity 100-120 degrees T followed by cooling and package of ready product. For bifidokefir preparing milk is subjected for thermic treatment, cooled to fermentation point; kefir ferment and bifidobacterium biomass were added successively to milk followed by fermentation, cooling and package of ready product. For bifidomilk preparing milk is subjected for thermic treatment, cooled to 18-25 C and bifidobacterium biomass is added to milk followed by stirring, cooling and package of ready product. Bacterium concentrate of Bifidobacterium bifidum at biotiter (0.8-1.0) x 1010 CFU/ml is used as bifidobacterium biomass at the following ratio of components, wt.-%: bifidobacterium concentrate 0.05-0.2, and milk - the rest to 100%.
