FIELD: drying of vegetable products.
SUBSTANCE: proposed drier has receiver and second drying chamber connected like the first one by means of pipeline with receiver and provided with fitted-on quick acting valve. Capacity of receiver is equal to free volume of drying chamber. Drier is furnished with heat exchanger, drying agent heating arrangement, cooling machine for cooling heat exchanger, vacuum pump and sluice chamber for collecting liquid from receiver, drying chambers and heat exchanger. Pipelines connecting drying chambers with receiver are installed tangentially relative to receiver, and diameter of pipeline connecting drying chamber with receiver is calculated by formula given in description of invention. Alternation of vacuum pulses and periodical holding under residual vacuum in combination with vacuum and temperature make it possible to quickly dry such vegetables as carrot, potato, onion, pepper and other food products in 60-75 min with provision of high quality of dry products complying with requirements of State Standards and Specifications.
EFFECT: reduced time taken for drying, provision of high quality of dried products.
