FIELD: nutrition biochemistry, food technology.

SUBSTANCE: invention relates to methods for conversion of phytate to inorganic phosphate and can be used in methods for preparing fodder for animals and food for humans. Method involves preparing a phytase-containing suspension, phytate-containing foodstuff and liquid. Suspension is prepared with pH 2.0-8.0 wherein 60-1000 weight part of liquid is added per 100 weight parts of phytate-containing foodstuff. A mixture containing water and water non-mixing organic solvent with boiling point 20-100oC is used as a liquid. The content of water non-mixing organic solvent in phytate-containing mixture is 20-85 weight parts per each 100 weight parts of indicated mixture. Then suspension is stirred and product is dried. Method provides the development of commercially acceptable method used for conversion of phytate to inorganic phosphate due to reducing energy consumption.
