FIELD: food industry.

SUBSTANCE: present invention relates to a method for extracting native proteins from vegetable raw materials, such as oilseeds, legumes and cereals. Native proteins mentioned in this invention are present in initial material in their non-denaturated state, i.e. their functional properties related to application in food industry, such as solubility, are preserved and not violated by processing conditions. Raw materials mentioned in the present invention are of vegetable origin and usually contain considerable (>5 % by weight) of natural oils and lipids. Invention also relates to a device for realizing this process and to a native protein obtained by the method according to the present invention.

EFFECT: soft fractionation of functional insulators obtained from oilseeds and cereals.
