FIELD: food industry.
SUBSTANCE: invention relates to fat-and-oil industry. Method for industrial production of cold-pressed vegetable oil (25), comprising steps of: peeling of oilseed grains (4) and removal of husks from the poor-husks fraction of grains (6) and squeezing of cold-pressed vegetable oil (25) from the lean husks of grains (6). Maximum temperature of formed cake (9) is 70 °C, and part of cake (9) is returned, mixed with lean husk fraction of grains (6) before squeezing and squeezed again. Part of the cake is expanded before returning after feeding water vapor under pressure to obtain crumbs, part of cake (9) is briefly heated to a temperature higher than 100 °C and before re-pressing is again cooled below 60 °C, in the returned part of cake (9), the average weight size of crumbs is 100 % or more of the average particle size of the lean grain fraction and/or the average grain size (4) of the oil seed, but not more than 4.00 % of the average particle size of the husks of the grain fraction and/or the average grain size (4) of the oil seed, and wherein in the case when the oil seed is a rape seed: - contains more than 4 wt. % of husks and/or - has moisture content less than 4 wt. % or more than 7 wt. % and/or residual oil content in cake (9) is reduced to less than 18 wt. % in terms of dry substance of cake (9). Method for industrial production of cold-pressed vegetable oil (25), comprising steps of: peeling of grains (4) of oil seed and removal of husks from the husks of grains (6) and squeezing cold-pressed vegetable oil (25) from the husk-poor fraction of grains (6), wherein resulting cake (9) has a maximum temperature of 70 °C, and part of cake (9) is returned, mixed with lean husk fraction of grains (6) before squeezing and squeezed again. Before being returned, the cake is pressed into granules which retain their shape during repeated squeezing; a portion of cake (9) is briefly heated to temperature above 100 °C before returning and before re-squeezing are cooled again below 60 °C, and wherein the weight average size of the granules is less than 50 % or more of the average particle size of the husks of the grain fraction and/or the average grain size (4) of the oil seed, but not more than 300 % of the average particle size of the poor husks of the grain fraction and/or the average size oil seed grains (4).
EFFECT: invention makes it possible to develop a universal, stable, reproducible and continuous method for cheap production of high-quality cold-pressed vegetable oil from oil seeds with high output and low content of denatured protein, in particular, as a protein concentrate.
