FIELD: food industry, pharmaceutics.

SUBSTANCE: the present innovation deals with evaluating the quality of medicinal preparations and food biologically active additives being of antioxidant properties, with choosing optimal technological modes at isolating natural fat-soluble antioxidants, with searching efficient system of antioxidants - synergists. One should introduce chloroform solutions of antioxidants into model system consisting of alcoholic solutions of ferrum chloride (III) and o-phenanthroline, and in case of altered coloring after 10-min-long exposure it is possible to determine the value of restorative properties, due to spectrophotometric registration of optic density of developed dyed complex Fe (II) with o-phenanthroline at wave length being 510 nm followed by calculation of restorative capacity of concentration unit of tested substance by the following formula: X = D/C, where C - weight portion of antioxidant, %; D - the value of optic density of Fe (II) complex with o-phenanthroline.

EFFECT: increased reproducibility and efficiency of detection.
