FIELD: food-processing industry, in particular, production of pasty food products from oil-seed plants, such as soya beans, cedar nut, walnut and other nuts or derivative mixtures thereof.

SUBSTANCE: method involves charging axially symmetric apparatus with suspension of seeds in aqueous medium until complete filling of recirculation contour including pump and pipeline bandage; dispersing seeds by pumping through of suspension in closed recirculation contour, with flow being turbulized in front of apparatus inlet end and spiral vortexing inside apparatus until predetermined consistency and temperature are reached; providing degassing and discharge of product; vortexing pumped through suspension to produce spiral reducing from the top to the bottom of radius for suppressing destruction and oxidation of fats and/or protein and taking out for recirculation through central opening in apparatus bottom; initiating degassing before appearance of axially symmetric funnel-shaped flow in mass of vortexed suspension; interrupting recirculation process when predetermined homogeneity and temperature is reached through the entire mass of product, and emptying recirculation contour. Apparatus has flow-through device having cross section reducing from the top to the bottom, and through opening arranged in bottom part and adapted for connecting flow-through device to pump suction branch pipe. Angle α between radius of circle of flow-through device inner wall and geometric axis of channel for supplying of turbulized recirculation fluid from pressure branch pipe of pump into flow-through device is selected within the range of 30 deg ≤ α ≤ 90 deg.

EFFECT: reduced thermal, mechanical and chemical destruction of fats and/or proteins, improved organoleptical properties of viscous and pasty base products obtained from seed plants.
