FIELD: brewery industry.
SUBSTANCE: method for producing malt involves cyclic soaking grains and its germination in the presence of growth-regulating agent taken among an order of alkyloxybenzenes. The growth-regulating agent is added in the amount 0.005-0.75 kg per 1 t of grains to the last soaking water and/or after 48-72 h of germination grains as measured for 0.01-1.5 kg per 1 t of grains. Among an order of alkyloxybenzene compound of the general formula:
is taken wherein R1 means hydrogen atom (H), C6H13; R2 means hydrogen atom (H), CH3, C19H39. Invention provides intensifying growth of grains, to activate amylolytic and proteolytic enzyme complexes of grain, to enhance quality of malt due to deeper dissolving endosperm, to reduce loss of dry matters in growing due to inhibition respiration of grain and growth of vegetative organs, to obtain microbiologically more pure grain due to bacteriostatic effect of alkyloxybenzenes, to enhance capacity of grain for germination due to activation of the grain embryo.
