FIELD: barley industry, in particular barley treatment for malt production.
SUBSTANCE: claimed method includes barley washing with water before soaking, determination of barley humidity, and treatment thereof in ultrahigh frequency field. Brewing-grade barley having humidity of 15.5-17.5 % is treated in field with frequency of 2450 MHz at heating rate of 0.4-0.8 °C/s for 60-90 s up to finish temperature of 58-60°C.
EFFECT: decreased microorganism amount, improved malt quality, decreased energy consumption, increased yield.
