SUBSTANCE: method comprises washing barley with water, treatment of barley with humidity of 15.5-17.5% in a microwave field with a frequency of 2450 MHz, with a heating rate of grain of 0.4-0.8°C/s for 60-90 s to final temperature of 58-60°C, soaking, malting, after treatment in the microwave field sorting of barley to the 1st and 2nd grades by size and uniformity of grain, after which barley of the I grade is sent for soaking, and barley of the II grade is repeatedly treated in the microwave field with a frequency of 2450 MHz with a heating rate of grain of 0.1-0.3°C/s. for 95-125 seconds.
EFFECT: improvement of quality of malt and implementation of practically waste-free production due to elimination of grain loss by increasing the quality in repeated microwave treatment of the sorted grain.
