FIELD: fat-and-oil industry.
SUBSTANCE: method involves grinding squid liver without preliminarily heating thereof; processing with open steam for 10-30 min until temperature of mass reaches 80-950C and mixing in apparatus equipped with jacket at said temperature for 60-120 min; separating and refining resultant fat. Method allows fat to be produced from novel raw material, such as squid liver.
EFFECT: increased yield and improved quality of resultant fat.
