FIELD: sugar industry.

SUBSTANCE: the invention is pertaining to the field of sugar industry, in particular, to production of sugar and may be used on the first stage of the sugar crystallization in a sugar end of a sugar mill. The method provides for a thickening of the syrup and an increase of its temperature by 5-6°C as compared with the initial temperature. Conduct the crystals formation. At that in the capacity of the centers of crystallization are used crystals with the sizes of 0.18-0.22 mm providing availability of them in amount of 9-12 crystals per 1 mm of the length of the surface of the trial glass. Growing up of the crystals starts at the factor of supersaturation of an interstitial solution of the massecuite of 1.15-1.17. The crystals growing up process ends at a supersaturation of 1.08-1.10 and at the contents of the crystals in thea massecuite of 25-40 %. The massecuite is stirred up by a syrup up to a supersaturation factor of 1.01-1.03, take a part of a massecuite and feed it to another vacuum apparatus. Then massecuite is subjected to the softening by steam up to the finished product in two vacuum apparatuses. The invention ensures a deep exhaustion of an inter-crystal solution, increase of percentage share of crystals in the massecuite and improvement of a granulometric composition of crystals.
