FIELD: sugar industry.

SUBSTANCE: method is proposed for making the massecuite of the first crystallization, according to which the syrup is first thickened with sugar melt, crystallization centres are formed in their solution, then the crystals are grown and the massecuite is boiled until cooked. Centres of crystallization are placed in the massecuite with powdered sugar at the rate of 5-7 pieces of crystals per 1 mm of the length of the test glass surface, and after fixing them with two or three pumps of syrup with sugar melt, the crystals are grown to a size of 0.10-0.12 mm, they are pumped twice with filtered juice of saturation level II or syrup with sugar melt, and then increased to 0.18-0.22 mm, while maintaining the supersaturation coefficient of the intercrystalline solution in the range of 1.10-1.12, up to the content of 90.5-91.5% solids in the massecuite. The final thickening of the massecuite before unloading it from the apparatus is carried out to 92.0-92.5% of solids, while before the final thickening, distilled monoglyceride is introduced into the massecuite in an amount of 0.001-0.003% by weight of the massecuite.

EFFECT: invention provides higher quality indicators of the massecuite and the sugar obtained from it.
