FIELD: milk processing industry.
SUBSTANCE: claimed method includes oak addition into defatted milk in ratio defatted milk : oak of 1:0.08-0.09, mixture heating up to 97-99°C and conditioning at the same temperature for 1.5-2 h. Obtained mixture is filtered and cooled. Beverage contains 10-13 % of dry matters, has density of 1.037-1.039 g/cm3 and acidity of 22°T.
EFFECT: simplified method; beverage with increased biological value due to transfer of nitrogen-containing matters, macro- and microelements, vitamins from oak to milk.
