FIELD: milk processing industry.
SUBSTANCE: claimed method includes preparation of walnut extract by blending of grinded walnuts with defatted milk in ratio of 1:10, respectively. Mixture is conditioned at 105°C for 5 min, cooled to 42-45°C and filtered. Obtained extract is mixed with sugar and defatted milk in ratio defatted milk:sugar:walnut of 1:0.04:0.05-0.25. Mixture is purified, homogenized, pasteurized and cooled. Beverage of present invention contains 9-12 mass % of dry matters, 0.4-1.5 mass % of fat, has density of 1.038-1.044 g/cm3 and acidity of 20°T.
EFFECT: simplified method; beverage with increased biological value.
