SUBSTANCE: particles of soluble powder blowing ingredient is formed from base material containing carbohydrate and protein, as well as gas insertions. When liquid is added at room temperature at least 1.5 ml of gas based on 1 g of soluble blowing ingredient is released.
EFFECT: increased amount of stable foam when addition of blowing ingredient in soluble whiten powders.
