FIELD: food and dairy industry, medicine.
SUBSTANCE: invention proposes a ferment consisting of the following microorganisms: Lactobacillus acidophilus, Lactobacillus bulgaricus, Lactobacillus casei, Lactobacillus helveticus, Lactobacillus plantarum, Streptococcus thermophilus, Lactococcus lactis, Lactococcus cremoris, Lactococcus diacetylactis, Bifidobacterium longum, Bifidobacterium bifidum, Bifidobacterium adolescentis, Escherichia coli M-17, Propionibacterium thechnicum and Propionibacterium shermanii. The ferment comprises additionally Brevibacterium linens and 0.5-1% of Saccharomyces cerevisiae autolyzate. Invention provides enhancing yield of useful metabolic products - lactic acid, vitamins, enzymes, nisine, biomass of live microbes by 25-40% as compared with monocultures.
EFFECT: improved and valuable properties of ferment, enhanced yield.
