FIELD: food-processing industry, in particular, production of farinaceous confectioneries.
SUBSTANCE: filler for baked product is emulsion produced by mixing of fried ground sun flower seeds and sweetener used in the ratio of 3:1. Baked product contains dough and filler placed inside dough enclosure and having halva-like composition produced from baked emulsion, which is obtained from fried ground sun flower seeds and sweetener used in the ratio of 3:1 and subjected to baking. Method involves preparing dough and filler; forming product; baking and cooling, with filler consisting of ground sunflower seeds with sweetener being placed within dough enclosure; baking at temperature of 200-270 C for 7-15 min. During baking process, oil is released from filler and absorbed by dough, with remaining filler acquiring halva-like composition after cooling.
EFFECT: wider range of kinds of biscuits due to creation of novel filler, reduced production costs and simplified production process.
