FIELD: dairy cannery industry.
SUBSTANCE: claimed method includes reduction of dehydrated milk with whole milk, or defatted milk, or mixture thereof at 40-45°C, addition of β-galactosidase enzyme, mixture heating up to 65°C, fat introducing, mixture emulsifying, homogenization or dispersing. Then sugar and stabilizer are added into mixture and obtained semimanufactured product is pasteurized. After pasteurization mixture is boiled in open boiler or autoclave at 95-120°C and for 15-30 min before ripeness filler is added.
EFFECT: condensed milk with long storage stability and improved biological characteristics.
