FIELD: food processing industry, biotechnology, feed manufacture, meat food production.
SUBSTANCE: claimed method includes blending of slaughter animal blood with milky whey as anticoagulant and conserving agent. Said milky whey is obtained by fractionation of defatted milk fermented with pure cultures L.acidophilus at 37-43°C up to titer of 260-280°T. Blood is blended with whey in ratio of 1.5:1. Claimed method makes it possible to increase shelf life of treated blood; to except chemical anticoagulants; to overlap anticoagulation and conserving processes; and to improve antibacterial activity of treated blood.
EFFECT: improved method for pretreatment of slaughter animal blood.
