FIELD: milk industry, in particular, cold preservation of horse milk for further production of koumiss.
SUBSTANCE: method involves freezing horse milk in bags made from polymer and combined materials having volume of 1000±50 ml in low-temperature chambers within temperature mode of from -22 C to -32 C for 1.5-2 hours; storing horse milk up to six months in refrigerating cabinets at temperature of -15 C.
EFFECT: reduced production costs, provision for retention of nutritive and biological value of frozen horse milk during storage and in the process of producing koumiss.
