FIELD: food processing industry.
SUBSTANCE: method for production of oil and fat composition containing hydrophobic components of licorice includes licorice blending with oil and fat-based solvent, containing 10 mass % or more of fat-soluble polyol and fat acid ester. Oil and fat composition, obtained by claimed method also is described. As polyol and fat acid ester either monoglyceride and/or diglyceride, or middle chain triglyceride is used. Oil-and-fat containing foodstuff contains abovementioned composition.
EFFECT: oil and fat composition having hypoglycemic effect and improving of lipid metabolism.
